A wine of absolute dedication. Entirely hand-picked from old estate vines, only the finest parcels of fruit are selected for inclusion in the rigorous, uncompromising small-batch winemaking process: open vat fermentation, regular racking, hand-plunging and extended time on lees.
Maturation takes place over three years in 100% new French oak barriques, followed by another four years (or more) resting in the cellar before being assessed for release.
