大嶺酒造的目標是釀製出世界性的,連外國人也會覺得好喝的日本酒。他們使用了日本百水名選之一的弁天池の湧水,商品全部為純米釀造無添加類,全人手釀造,酒瓶瓶身的產品名稱、標籤、敘述直接印於瓶身,不同於傳統瓶身將酒標印於平面紙再貼上。這次的夏季限定版「山田錦 夏純 霞」刻意保留了煙霞狀的酒粕,配以晴藍色的瓶身,散發著誘人的水果芳香,整體味道變得更濃郁有層次,沒有經過火入處理(生酒),在裝瓶前亦選擇不加入釀造用水去稀釋酒體(原酒),加上沒有經過活性碳過濾的過程(無濾過),香氣上更奔放,口感更富層次感,相比一般有做水割(加水)的酒,更保留原有的風味。大家更可成三個層次飲用,

1. 靜置沉澱後,清澈的頂層,

2. 頂層同底層搖勻混合層,

3. 靜置沉澱後,濃郁的底層。

Oimine Brewery aims to produce a globally recognized Japanese sake that is enjoyed even by foreigners. They utilize the pristine water from Benten Pond, which is one of Japan's top 100 famous waters. All of their products are made with pure rice and without any additives. The sake is meticulously handcrafted, with the product name, label, and description directly printed on the bottle itself, distinguishing it from traditional sake bottles that have labels attached. Their limited edition "Yamada Nishiki Summer Pure Kasumi" intentionally retains the smoky haze of the sake lees. It is presented in a clear blue bottle, exuding an enticing fruity aroma. The overall flavor becomes richer and more layered, as it is not subjected to heat treatment (unpasteurized) and no brewing water is added to dilute the sake (undiluted). Furthermore, it does not undergo activated carbon filtration (unfiltered), resulting in a more pronounced aroma and a texture with enhanced depth. In comparison to sake that is diluted with water, it preserves the original flavor. There are three ways to enjoy this sake:

1. After settling, the clear top layer.

2. Mixing the top and bottom layers for a well-blended taste.

3. After settling, the rich bottom layer.
