此清酒是山口縣享譽國際的人氣清酒銘柄「獺祭」只在冬季才出產的限定生酒酒款。「寒造早槽」意指自古以來只有在嚴寒冬天才釀造清酒的傳統,為了向古時的釀造文化致敬,酒造便跟隨傳統,推出此冬季釀造並直接裝瓶的純米大吟釀酒。今年「旭酒造」將精米度由「四割五分」昇華至「三割九分」,作品整體的吟釀香氣更出眾,味道亦更濃郁!開瓶散發如蘋果般怡人的香氣,「しぼりたて(鮮榨)」那微微的碳酸感加上「生酒」的新鮮口感,令味道多了一份活潑的感覺,酒米之王「山田錦」的米旨味溫和蔓延,收結輕盈,非常值得一試!此酒除了單獨品飲,亦適合冷飲配搭海鮮、刺身、或壽司等一同享用。

This sake is a limited edition seasonal sake called "Dassai 39 Junmai Daiginjo Hanazukuri Early Pressed Sake" that is highly acclaimed internationally and produced only in winter in Yamaguchi Prefecture. The term "Hanazukuri" refers to the traditional practice of brewing sake only during the harsh winter season. In order to pay homage to this ancient brewing culture, Asahi Shuzo, the brewery, follows the traditional method and releases this winter-brewed, directly bottled pure rice sake. This year, Asahi Shuzo has improved the rice polishing ratio from "45%" to "39%", resulting in a more outstanding overall aroma and a richer flavor. When opened, it emits a pleasant apple-like fragrance. The slight carbonation and fresh taste of "shiboritate" (freshly pressed) sake add a lively sensation to the flavor. The mild and mellow flavor of the "Yamada Nishiki" rice, known as the king of sake rice, lingers gently on the palate, making it definitely worth a try! This sake is not only suitable for enjoying on its own but also pairs well with cold dishes such as seafood, sashimi, and sushi.
