"Yukisaka" is a sake brewed by the first female toji (master brewer) in Noto, Ms. Akiko Fujita. According to legend, she was the "beloved disciple" of Mr. Nonkuchi, the god of sake brewing. After ten years of training and learning the techniques of Mr. Nonkuchi, Ms. Fujita's philosophy of sake brewing is to "draw from the best of Mr. Nonkuchi's skills." One of the most remarkable aspects of Mr. Nonkuchi's sake brewing is the presence of "character" in its flavor.
